1 ½ cups graham cracker crumbs
½ cup granulated sugar
1/3 cup unsalted butter, melted
4 large egg yolks
1 can (14 ounces) sweetened condensed milk
¾ cup fresh key lime juice (or regular lime juice)
1 teaspoon lime zest (optional)
Whipped cream, for serving
Lime slices, for garnish (optional)
Instructions
Preheat your oven to 350°F (175°C).
Combine graham cracker crumbs, sugar, and melted butter in a bowl to make the crust.
Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan. Bake the crust for about 8–10 minutes until lightly golden and then let it cool.
In a mixing bowl, whisk together the egg yolks and sweetened condensed milk until smooth. Add the fresh key lime juice and lime zest, mixing until fully combined.
Pour the filling into the cooled crust and bake for an additional 15 minutes.
Allow the pie to cool at room temperature before chilling it in the refrigerator for at least 4 hours or overnight.
Just before serving, whip some heavy cream with sugar until soft peaks form, then spread or pipe the cream on top of the pie and garnish with lime slices.
