  • Instructions

  • Preheat your oven to 350°F (175°C).
  • Combine graham cracker crumbs, sugar, and melted butter in a bowl to make the crust.
  • Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan. Bake the crust for about 8–10 minutes until lightly golden and then let it cool.
  • In a mixing bowl, whisk together the egg yolks and sweetened condensed milk until smooth. Add the fresh key lime juice and lime zest, mixing until fully combined.
  • Pour the filling into the cooled crust and bake for an additional 15 minutes.
  • Allow the pie to cool at room temperature before chilling it in the refrigerator for at least 4 hours or overnight.
  • Just before serving, whip some heavy cream with sugar until soft peaks form, then spread or pipe the cream on top of the pie and garnish with lime slices.
