3 cups of lemon balm leaves
2 cups of water
1/4 cup of lemon juice
1 package (1.75 oz) of fruit pectin
4 cups of granulated sugar
1/2 teaspoon of salt
Instructions
Rinse the fresh lemon balm leaves under cold water to remove any dirt or bugs. Gently pat them dry with a kitchen towel.
In a pot, combine your lemon balm leaves and 2 cups of water. Bring this to a boil over medium heat, then reduce to a simmer for about 10-15 minutes.
Strain the mixture through a fine mesh sieve or cheesecloth into a bowl.
Return the strained liquid to the pot, add the lemon juice, pectin, and salt, then stir well. Bring the mixture to a rolling boil over medium-high heat.
Once boiling, add all the sugar at once. Stir until dissolved, then bring back to a boil and let it go for exactly 1 minute.
To check if your jelly is ready to set, drop a spoonful onto a plate and place it in the freezer for a minute.
If ready, carefully pour the hot jelly into sterilized jars, leaving a little headspace. Seal them up tightly and let them cool completely.
Allow the jars to sit at room temperature for at least 24 hours before transferring them to the fridge or pantry.
