1 ¾ cups all-purpose flour (for crust)
½ cup powdered sugar (for crust)
½ cup unsalted butter, softened (for crust)
¼ teaspoon salt (for crust)
1 cup granulated sugar (for filling)
2 large eggs (for filling)
1/3 cup fresh lemon juice (about 2–3 lemons, for filling)
2 tablespoons all-purpose flour (for filling)
Zest of 1 lemon (optional, for filling)
Powdered sugar for dusting
Instructions
Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine the crust ingredients. Press into the bottom of an 8×8-inch baking dish and bake for 15-20 minutes until lightly golden. Let cool.
In another bowl, whisk together filling ingredients until smooth. Pour over pre-baked crust.
Bake for an additional 20-25 minutes until the filling is set with a slight jiggle. Let cool completely.
