  • 1 ½ cups of all-purpose flour
  • ½ cup of unsalted butter, cold and cubed
  • ¼ cup of powdered sugar
  • 1 large egg yolk
  • 23 tablespoons of cold water
  • 1 cup of fresh blueberries
  • 3 large eggs
  • 1 cup of granulated sugar
  • ½ cup of fresh lemon juice
  • 2 tablespoons of lemon zest
  • ½ cup of heavy cream

  • Instructions

  • In a large bowl, combine the flour and powdered sugar. Add the cold, cubed butter and rub it in with your fingers until the mixture resembles coarse crumbs. Add the egg yolk and enough cold water to bring the dough together.
  • Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  • Preheat your oven to 350°F (175°C).
  • Roll out the dough on a floured surface until it’s about ¼ inch thick. Transfer it to a tart pan and trim any excess dough. Prick the bottom with a fork.
  • Line the crust with parchment paper and fill it with pie weights or dry beans. Bake for 15 minutes, then remove the parchment and weights, and bake for another 5-7 minutes until lightly golden.
  • In a medium bowl, whisk together the eggs and sugar until well combined. Stir in the lemon juice, lemon zest, and heavy cream.
  • Gently fold in the fresh blueberries into the filling mixture.
  • Pour the filling into the cooled crust, spreading it evenly.
  • Bake the tart at 350°F (175°C) for about 25-30 minutes or until the filling is set and slightly jiggles in the center.
  • Let the tart cool completely at room temperature, then refrigerate for at least an hour before serving.
