8 oz macaroni
1 bunch asparagus (about 1 lb), trimmed and cut into 2-inch pieces
1 cup frozen peas
1/4 cup olive oil
2 tablespoons Dijon mustard
Juice of 1 lemon
Salt and black pepper to taste
Chopped fresh herbs like parsley or basil (optional)
Feta cheese crumbles (optional)
Cherry tomatoes (optional)
Instructions
In a large pot, bring water to a boil and add a pinch of salt. Cook the macaroni according to package instructions until al dente. Stir occasionally to keep it from sticking.
When there are about 2 minutes left on the macaroni timer, toss in the asparagus.
