  • 4 boneless, skinless chicken breasts
  • 1 pound baby potatoes
  • 4 cloves garlic, minced
  • 1 lemon (zested and juiced)
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Optional: Cherry tomatoes, zucchini, bell peppers, parmesan cheese

  • Instructions

  • Preheat your oven to 400°F (200°C).
  • In a bowl, mix together garlic, lemon zest, lemon juice, olive oil, oregano, thyme, salt, and pepper to prepare the marinade.
  • Place chicken breasts in a large zip-top bag or dish and pour the marinade over them. Let soak for at least 30 minutes.
  • While marinating, rinse baby potatoes and cut them in half. Toss with olive oil, salt, and pepper.
  • Lay marinated chicken on one side of a baking sheet and seasoned potatoes on the other.
  • Bake for about 25-30 minutes until chicken juices run clear and potatoes are tender.
