1 lb large shrimp (peeled and deveined)
1 cup jasmine rice
2 cups chicken or vegetable broth
4 tablespoons olive oil
4 cloves garlic (minced)
1 medium lemon (zested and juiced)
1/4 teaspoon red pepper flakes (optional)
Salt and pepper to taste
Fresh parsley (chopped, for garnish)
Instructions
Rinse the jasmine rice under cold water until the water runs clear. In a medium saucepan, bring 2 cups of chicken or vegetable broth to a boil. Add the rinsed rice, a pinch of salt, cover and let it cook for about 15 minutes or until all the liquid is absorbed.
While the rice is cooking, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Add the shrimp, season with salt, pepper, and red pepper flakes, and cook for about 2-3 minutes on each side until the shrimp turn pink and opaque. Squeeze in the juice of half the lemon and add the lemon zest.
Once the shrimp is cooked, fluff the rice with a fork and add it to the skillet. Pour in the remaining olive oil and lemon juice, tossing everything to combine well. Adjust seasoning if needed.
Transfer the mixture to a serving platter or individual plates. Garnish with fresh chopped parsley and serve immediately.
