4 large lemons2 cups granulated sugar1 cup water1 package pectin (pectin is optional)

Grate the zest off avoiding the bitter white pith.Cut the lemons in half and juice them into a measuring cup.In a large pot, mix the lemon juice, water, and lemon zest. Add pectin if using.Place the pot over medium heat and stir until it comes to a rolling boil.Once boiling, stir in the sugar gradually until fully dissolved, then cook for about 10 minutes.To see if it’s ready, grab a spoon and drop a bit of the jam on a cold plate. If it holds the line, it’s ready.Using sterilized jars, pour the lemon jam in while it’s hot, seal tightly, and let cool. Notes
