2 cups rolled oats
1 cup all-purpose flour
1/2 cup brown sugar
1/2 cup granulated sugar
1/2 cup unsalted butter, melted
1 cup fresh lemon juice
1 tablespoon lemon zest
2 large eggs
1 teaspoon baking powder
Instructions
Preheat your oven to 350°F (175°C) and line a 9×9 inch baking dish with parchment paper.
In a mixing bowl, combine the rolled oats, flour, brown sugar, and melted butter until crumbly. Press two-thirds of the mixture into the bottom of the prepared pan.
In a separate bowl, whisk together the granulated sugar, lemon juice, lemon zest, eggs, and baking powder until smooth. Pour this mixture over the crust evenly.
Sprinkle the remaining oat mixture over the lemon filling evenly.
Bake for about 25-30 minutes, or until the lemon filling is set and the topping is lightly golden.
Allow the bars to cool in the pan for about 20 minutes, then lift them out and cut them into squares.
