  • 1 tablespoon of baking powder
  • 1/2 teaspoon of baking soda

  • 1/2 cup of unsalted butter, melted
  • 1 cup of sour cream
  • 2 large eggs
  • 1 tablespoon of lemon juice
  • Zest of 1 lemon
  • 1/4 cup of poppy seeds

  • Instructions

  • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it well.
  • In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  • In another bowl, mix the melted butter, sour cream, eggs, lemon juice, and lemon zest until smooth.
  • Pour the wet ingredients into the dry ingredients. Fold until just combined.
  • Add in the poppy seeds and fold until evenly distributed.
  • Divide the batter among the muffin cups, filling each about 2/3 full.
  • Bake for 18-20 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
  • Let them cool in the pan for about 5 minutes before transferring to a wire rack.
