Description

Ingredients

1 cup of orzo
1 can (15 oz) of chickpeas, drained and rinsed
4 cups of vegetable broth
1 tablespoon of olive oil
1 onion, diced
2 cloves of garlic, minced
1 carrot, diced
2 cups of spinach
Juice of 1 lemon
Salt and pepper to taste
Instructions
In a large pot, heat the olive oil over medium heat. Add the diced onion and carrots, cooking until they soften—about 5 minutes. Add the garlic and cook for another minute until fragrant.
Pour in the vegetable broth, and toss in the rinsed chickpeas. Bring it all to a simmer, letting the flavors mingle together beautifully.
Stir in the orzo and allow it to cook for 8 minutes, or until al dente.
Once the orzo is just about done, stir in the spinach until it wilts. Squeeze in the lemon juice, followed by salt and pepper to taste.
Ladle the soup into bowls and get creative with garnishes. Enjoy each spoonful!
