Ingredients

  • 1 can (15 oz) of chickpeas, drained and rinsed
  • 4 cups of vegetable broth
  • 1 tablespoon of olive oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 carrot, diced
  • 2 cups of spinach
  • Juice of 1 lemon
  • Salt and pepper to taste

  • Instructions

  • In a large pot, heat the olive oil over medium heat. Add the diced onion and carrots, cooking until they soften—about 5 minutes. Add the garlic and cook for another minute until fragrant.

  • Once the orzo is just about done, stir in the spinach until it wilts. Squeeze in the lemon juice, followed by salt and pepper to taste.
