  • ⅓ cup Limoncello
  • 1 tablespoon lemon zest
  • 1 tablespoon cornstarch (optional)

  • Instructions

  • Preheat your oven to 325°F (160°C).
  • In a medium bowl, mix graham cracker crumbs, melted butter, and sugar until combined; press into a 9-inch springform pan and bake for 10 minutes.
  • In a large mixing bowl, beat cream cheese with an electric mixer until smooth. Add sugar and mix until combined and smooth without lumps.
  • Add eggs one at a time, mixing well after each addition. Then add sour cream, Limoncello, and lemon zest until just combined.
  • Pour the filling onto the cooled crust, smoothing the top with a spatula.
  • Bake the cheesecake for about 60-70 minutes until the edges are set and the center is slightly jiggly.
  • Turn off the oven and crack the door open, letting the cheesecake cool inside for about an hour, then transfer to the fridge for at least 4 hours or overnight.
