4–5 medium lemons (zested and juiced)
3 cups granulated sugar
2 cups water
1 cup limoncello
1 packet (1.75 oz) pectin

Ginger (optional)

Instructions
Start by thoroughly washing your lemons. Zest the lemons using a fine grater, avoiding the bitter pith. Juice the lemons until you have about a cup of juice.
In a large pot, combine the lemon zest, lemon juice, sugar, and water. Stir well and bring to a gentle simmer over medium heat. Keep stirring until the sugar is completely dissolved.
Once simmering, stir in the pectin and continue to simmer for about 5-10 minutes until it thickens slightly, adding optional ginger or herbs if desired.
Stir in the limoncello and let simmer for another 3-5 minutes.
Check the marmalade's thickness using a spoon; it should hold its shape on a plate. If not, simmer for a few more minutes.
Ladle the hot marmalade into sterilized jars, leaving about 1/4-inch headspace, and seal them with lids.
Let the jars cool to room temperature before storing.
