  • Start by thoroughly washing your lemons. Zest the lemons using a fine grater, avoiding the bitter pith. Juice the lemons until you have about a cup of juice.
  • In a large pot, combine the lemon zest, lemon juice, sugar, and water. Stir well and bring to a gentle simmer over medium heat. Keep stirring until the sugar is completely dissolved.
  • Once simmering, stir in the pectin and continue to simmer for about 5-10 minutes until it thickens slightly, adding optional ginger or herbs if desired.
