Ingredients

Scale
  • 2 lbs small baby potatoes
  • ¼ cup butter
  • ½ cup sour cream
  • 1 cup shredded sharp cheddar cheese
  • 23 green onions, chopped
  • Salt and pepper to taste
  • Crispy bacon bits (optional)
  • Jalapeños (optional)
  • Greek yogurt (as a sour cream substitute, optional)
  • Extra shredded cheese for garnish (optional)
  • Fresh herbs for garnish (optional)

  • Instructions

  • Start by washing the baby potatoes under cool water. Place them in a large pot, cover with water, and add salt. Bring to a boil over high heat.
  • Cook the potatoes for about 15-20 minutes until fork-tender. They should be soft enough to smash but not overcooked.
  • Preheat your oven to 400°F (200°C).
  • Drain the potatoes and place them on a lined baking sheet. Gently smash each potato until slightly flattened.
  • Drizzle melted butter over the smashed potatoes and season with salt and pepper. Bake for 15-20 minutes until golden and crispy.
  • Remove the potatoes from the oven and sprinkle shredded cheese on top. Bake for an additional 5 minutes until the cheese is melted.
  • Top with a dollop of sour cream, green onions, and any other desired toppings. Serve hot.
  • Notes

Loaded Smashed Potatoes are a comforting dish, perfect for game nights or family gatherings, with crispy potato skins and creamy toppings.
