2 lbs small baby potatoes
¼ cup butter
½ cup sour cream
1 cup shredded sharp cheddar cheese
2–3 green onions, chopped
Salt and pepper to taste

Instructions
Start by washing the baby potatoes under cool water. Place them in a large pot, cover with water, and add salt. Bring to a boil over high heat.
Cook the potatoes for about 15-20 minutes until fork-tender. They should be soft enough to smash but not overcooked.
Preheat your oven to 400°F (200°C).
Drain the potatoes and place them on a lined baking sheet. Gently smash each potato until slightly flattened.
Drizzle melted butter over the smashed potatoes and season with salt and pepper. Bake for 15-20 minutes until golden and crispy.
