1 ½ lbs lobster meat
1 cup heavy cream
½ cup chicken or seafood broth
1 onion, diced

1 package of puff pastry
1 cup peas (optional)

Instructions
Prepare the lobster: If using live lobster, steam it until cooked, then remove the meat from the shell and chop into bite-sized pieces. If using pre-cooked lobster, ensure it’s thawed if frozen.
Sauté the vegetables: In a large skillet, melt the butter over medium heat. Add the diced onions, carrots, and celery. Sauté until the vegetables are softened, about 5-7 minutes. Stir in the garlic and thyme, cooking for another minute until fragrant.
Make the sauce: Pour in the chicken or seafood broth and heavy cream, stirring well. Allow the mixture to simmer for about 5 minutes until it thickens slightly. Season with salt and pepper.
