3 tablespoons pure maple syrup
2 tablespoons unsalted butter

1 teaspoon cinnamon (optional)

A pinch of red pepper flakes (optional)
Chopped fresh parsley or thyme (for garnish)
Toasted nuts (walnuts or pecans) (for garnish)
Instructions
Preheat your oven to 400°F (200°C).
Peel the carrots and slice them into uniform pieces – about 1-2 inches long.
In a small saucepan over low heat, melt the butter. Once melted, add the maple syrup, salt, and pepper, stirring gently to combine.
In a large bowl, place the sliced carrots and pour the maple-butter mixture over them. Toss well to ensure each carrot is coated.
