Ingredients

  • 1 cup quinoa
  • 2 cups water or vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup corn (fresh, canned, or frozen)
  • 1 avocado, diced
  • 1 small red onion, diced
  • 1/2 cup cilantro, chopped
  • 1/4 cup olive oil
  • Juice of 2 limes
  • Salt and pepper, to taste

  • Instructions

  • Rinse the quinoa under running water to remove its natural coating (saponins) that can taste bitter. Combine it with water or vegetable broth in a pot. Bring it to a boil, cover it, and lower the heat. Let it simmer for about 15 minutes, or until all the liquid is absorbed.
  • While the quinoa is cooking, chop your vegetables.
  • In a small bowl, whisk together the olive oil, lime juice, salt, and pepper.
  • Begin with a layer of quinoa at the bottom of your mason jars, then add your cherry tomatoes, cucumber, corn, red onion, avocado, and cilantro. Repeat until the jars are full, leaving a little space at the top.
  • Drizzle the dressing evenly on top of the ingredients.
  • Seal the jars tightly and store them in the fridge.
