Ingredients

  • 4 cups of stale bolillo or French bread, cubed
  • 2 cups of milk
  • 1 cup of water
  • 1 cup of brown sugar
  • 1 teaspoon of ground cinnamon
  • ½ teaspoon of ground cloves
  • 1 cup of grated cheese (Mexican queso fresco or Monterey Jack)
  • ¼ cup of chopped pecans or walnuts (optional)
  • Raisins (optional)

  • Instructions

  • Preheat your oven to 350°F (175°C).
  • In a medium saucepan, combine the water, milk, and brown sugar over medium heat. Stir until the sugar has dissolved.
  • Add the cinnamon and cloves to the warm mixture.
  • In a large mixing bowl, combine the cubed bread, nuts, and raisins (if using). Pour the warm milk mixture over the bread.
  • Let it sit for about 10 minutes.
  • Layer half of the soaked bread mixture in a greased baking dish. Then sprinkle half of your cheese on top. Repeat with the remaining bread and cheese.
  • Bake for 30-40 minutes, until golden and set.
  • Allow it to cool slightly before serving.
