4 cups of stale bolillo or French bread, cubed2 cups of milk1 cup of water1 cup of brown sugar1 teaspoon of ground cinnamon½ teaspoon of ground cloves1 cup of grated cheese (Mexican queso fresco or Monterey Jack)¼ cup of chopped pecans or walnuts (optional)Raisins (optional)
Preheat your oven to 350°F (175°C).In a medium saucepan, combine the water, milk, and brown sugar over medium heat. Stir until the sugar has dissolved.Add the cinnamon and cloves to the warm mixture.In a large mixing bowl, combine the cubed bread, nuts, and raisins (if using). Pour the warm milk mixture over the bread.Let it sit for about 10 minutes.Layer half of the soaked bread mixture in a greased baking dish. Then sprinkle half of your cheese on top. Repeat with the remaining bread and cheese.Bake for 30-40 minutes, until golden and set.Allow it to cool slightly before serving. Notes
