  • 1 cup uncooked orzo pasta
  • ½ cup cherry tomatoes, halved
  • ½ cup cucumber, diced
  • ½ cup bell pepper, diced (any color you prefer)
  • ¼ cup red onion, finely chopped
  • ½ cup Kalamata olives, pitted and sliced
  • ½ cup feta cheese, crumbled
  • ¼ cup fresh parsley, chopped
  • ¼ cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

  • Instructions

  • Cook the orzo pasta according to the package instructions. Drain and rinse under cold water.
  • Chop all fresh vegetables: halve the cherry tomatoes, dice cucumber and bell pepper, and finely chop red onion.
  • In a large bowl, combine the cooked orzo, chopped vegetables, Kalamata olives, and crumbled feta cheese. Toss gently.
  • Whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper in a small bowl. Drizzle over the salad and toss gently.
  • Garnish with fresh parsley and serve immediately, or let it rest in the fridge for an hour.
