Ingredients

  • 4 salmon fillets (about 6 ounces each)
  • 1 cup cherry tomatoes, halved
  • 1 medium red onion, sliced
  • 1 cup Kalamata olives, pitted and halved
  • 3 garlic cloves, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Juice of 1 lemon
  • Salt and pepper to taste

  • Instructions

  • Preheat your oven to 400°F (200°C).
  • In a large mixing bowl, combine the halved cherry tomatoes, sliced red onion, Kalamata olives, minced garlic, olive oil, dried oregano, salt, and pepper. Toss everything together until well-coated.
  • Spread the veggie mixture on one side of a large baking tray in a single layer.
  • On the other side of the tray, place the salmon fillets skin-side down. Squeeze lemon juice over them and sprinkle additional salt and pepper.
  • Slide the tray into the oven and roast for about 15-20 minutes, or until the salmon is cooked through.
  • Remove from the oven and let it sit for a couple of minutes before serving.
  • Garnish with parsley and extra lemon slices if desired.
