Ingredients

4 salmon fillets (about 6 ounces each)
1 cup cherry tomatoes, halved
1 medium red onion, sliced
1 cup Kalamata olives, pitted and halved
3 garlic cloves, minced
2 tablespoons olive oil
1 teaspoon dried oregano
Juice of 1 lemon
Salt and pepper to taste
Instructions
Preheat your oven to 400°F (200°C).
In a large mixing bowl, combine the halved cherry tomatoes, sliced red onion, Kalamata olives, minced garlic, olive oil, dried oregano, salt, and pepper. Toss everything together until well-coated.
Spread the veggie mixture on one side of a large baking tray in a single layer.
On the other side of the tray, place the salmon fillets skin-side down. Squeeze lemon juice over them and sprinkle additional salt and pepper.
Slide the tray into the oven and roast for about 15-20 minutes, or until the salmon is cooked through.
Remove from the oven and let it sit for a couple of minutes before serving.
Garnish with parsley and extra lemon slices if desired.
