4 salmon fillets (about 6 oz each)
2 tablespoons olive oil
1 lemon (zested and juiced)
2 cloves garlic, minced
1 teaspoon dried oregano
1 cup cherry tomatoes, halved
1/2 cup black olives, pitted and sliced
Fresh parsley, chopped (for garnish)
Instructions
Preheat your oven to 400°F (200°C).
Prepare a baking sheet lined with parchment paper or lightly greased.
In a bowl, whisk together the olive oil, lemon zest, lemon juice, minced garlic, dried oregano, salt, and pepper.
Place the salmon fillets on the baking sheet with space in between. Pour the marinade over them and gently rub it in. Add the chopped cherry tomatoes and olives around the salmon.
