Ingredients

  • 1 lb flank or sirloin steak
  • 2 tablespoons olive oil
  • Salt & pepper to taste
  • 1 cup cooked quinoa
  • 1 cucumber, diced
  • 1/2 cup Kalamata olives, pitted and halved
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh parsley, chopped
  • Juice of 1 lemon

  • Instructions

  • Season the steak generously with salt and pepper. Drizzle with olive oil.
  • Preheat grill or grill pan over medium-high heat. Grill steak for 5-7 minutes on each side for medium-rare. Let rest.
  • Prepare quinoa according to package instructions.
  • Chop the cucumber, halve the cherry tomatoes, slice the red onion, and chop parsley.
  • In a large bowl, combine quinoa, cucumber, tomatoes, olives, red onion, and feta. Drizzle with lemon juice and toss.
  • Slice the rested steak against the grain into thin strips.
  • Assemble the bowl by starting with the quinoa mixture and topping with steak. Garnish as desired.
