2 lbs beef chuck roast
1 onion, chopped
4 cloves garlic, minced
2 lbs tomatillos, husked and quartered
4–6 green chilies (such as poblano or serrano)
2 cups beef broth
1 tablespoon ground cumin
1 tablespoon dried oregano
Salt and pepper to taste
1 cup diced potatoes (optional)
1–2 jalapeños, diced (optional)
Fresh lime juice (optional)
Chopped cilantro (for garnishing)
Diced avocado (for garnishing)
Sour cream (for garnishing)
Queso fresco (for garnishing)
Instructions
Prepare the ingredients: Chop the onion and garlic, and husk and quarter the tomatillos.
Brown the beef: Heat oil in a large pot or Dutch oven over medium-high heat, season the beef with salt and pepper, and brown on all sides for about 6-8 minutes.
Add aromatics: Add chopped onion and minced garlic to the pot and sauté until the onions are translucent (around 3-4 minutes).
Incorporate tomatillos and chilies: Stir in the quartered tomatillos and chopped green chilies, mixing well.
Add spices and broth: Sprinkle in cumin and oregano, then pour in beef broth and stir to combine.
Simmer: Bring to a boil, reduce heat to low, cover, and simmer for 2-3 hours until the beef is tender.
Adjust seasoning: Taste and add more salt, pepper, or lime juice as necessary.
Serve: Ladle into bowls and garnish with cilantro, avocado, sour cream, and queso fresco.
