  • 46 green chilies (such as poblano or serrano)
  • 2 cups beef broth
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • Salt and pepper to taste
  • 1 cup diced potatoes (optional)
  • 12 jalapeños, diced (optional)
  • Fresh lime juice (optional)
  • Chopped cilantro (for garnishing)
  • Diced avocado (for garnishing)
  • Sour cream (for garnishing)
  • Queso fresco (for garnishing)

  • Instructions

  • Prepare the ingredients: Chop the onion and garlic, and husk and quarter the tomatillos.
  • Brown the beef: Heat oil in a large pot or Dutch oven over medium-high heat, season the beef with salt and pepper, and brown on all sides for about 6-8 minutes.
  • Add aromatics: Add chopped onion and minced garlic to the pot and sauté until the onions are translucent (around 3-4 minutes).
  • Incorporate tomatillos and chilies: Stir in the quartered tomatillos and chopped green chilies, mixing well.
  • Add spices and broth: Sprinkle in cumin and oregano, then pour in beef broth and stir to combine.
  • Simmer: Bring to a boil, reduce heat to low, cover, and simmer for 2-3 hours until the beef is tender.
  • Adjust seasoning: Taste and add more salt, pepper, or lime juice as necessary.
