Ingredients

  • 1 pound of shrimp, peeled and deveined
  • 2 tablespoons of olive oil
  • 2 tablespoons of fresh lime juice
  • 3 cloves of garlic, minced
  • 1 teaspoon of chili powder
  • 1/2 teaspoon of cumin
  • Salt to taste
  • 1 cup of corn, fresh or canned
  • 1/4 cup of red onion, finely chopped
  • 1 jalapeño, finely chopped
  • 1/4 cup of cilantro, chopped
  • Salt and pepper to taste

  • Instructions

  • In a medium bowl, combine olive oil, lime juice, minced garlic, chili powder, cumin, and salt. Mix well.
  • Add the shrimp, tossing until well coated. Cover and let marinate for at least 30 minutes.
  • In another bowl, mix corn, red onion, jalapeño, cilantro, and a pinch of salt and pepper. Stir and set aside.
  • Preheat your grill to medium-high heat and soak wooden skewers in water for about 30 minutes.
  • Thread the marinated shrimp onto skewers, leaving space between each piece.
  • Grill the shrimp skewers for about 2-3 minutes on each side until pink and opaque.
  • Plate the grilled shrimp, top with the corn salsa, and serve with lime wedges.
