Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1/4 cup freshly squeezed lime juice
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 3 cloves garlic, minced
  • 2 cups corn, fresh or canned
  • 1/2 cup diced red onion
  • 1 jalapeño, seeded and diced
  • 1/4 cup chopped cilantro

  • Instructions

  • In a large bowl, whisk together the olive oil, lime juice, chili powder, cumin, minced garlic, salt, and pepper.
  • Place the shrimp in the bowl with the marinade, toss to coat, and let sit for at least 15 minutes.
  • In a separate bowl, combine corn, diced red onion, jalapeño, chopped cilantro, lime juice, and a pinch of salt. Stir gently and set aside.
  • Preheat the grill to medium-high heat.
  • Thread the marinated shrimp onto skewers and grill for about 2-3 minutes on each side until pink and opaque.
