1 can (15 oz) black beans
1 can (15 oz) diced tomatoes
1 package taco seasoning
6 flour tortillas
1 cup corn (canned or frozen)
2 cups shredded cheddar cheese
1 cup sour cream
Salt and pepper to taste
Instructions
Preheat your oven to 350°F (175°C).
In a large skillet, brown the ground beef over medium heat until there’s no pink left.
Add the taco seasoning, black beans, diced tomatoes, and corn to the skillet. Stir well and let it simmer for about 5-7 minutes.
Cut the flour tortillas in half for layering.
In a greased 9×13 inch baking dish, layer half the tortillas, then half the beef mixture, a scoop of sour cream, and a sprinkle of cheese. Repeat the layering.
