Ingredients
Scale
4 cups corn kernels
1 medium onion, chopped
3 cloves garlic, minced
4 cups vegetable or chicken broth
1 cup heavy cream
Juice of 2 limes
1 teaspoon chili powder
Salt and pepper to taste
Cilantro for garnish
Instructions
Sauté the onions and garlic: In a large pot, heat a tablespoon of oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute.
Add the corn: Add the corn kernels to the pot and stir well, allowing them to cook for about 5 minutes until they start to get a little charred.
Pour in the broth: Add your broth to the pot and bring it to a gentle simmer. Allow it to simmer for 15-20 minutes, letting the flavors meld.
Blend the soup: Remove the pot from heat, and carefully use an immersion blender to puree the soup until smooth, or blend in batches in a regular blender.
Add cream and lime juice: Stir in the heavy cream and lime juice, then bring the mixture back to a low simmer.
Season: Add chili powder, salt, and pepper to taste. Adjust seasoning as desired.
Garnish and serve: Ladle the soup into bowls, garnish with your choice of toppings, and serve hot.
