1 lb boneless, skinless chicken breasts
1 can (15 oz) white beans
1 can (15 oz) corn
1 medium onion, diced
4 cloves garlic, minced
4 cups chicken broth
1 tsp chili powder
1 tsp ground cumin
Salt and pepper to taste
1 cup heavy cream
Optional: Jalapeños, Fresh cilantro, Lime juice
Special Garnishes: Queso fresco, Avocado slices, Chili powder or smoked paprika
Instructions
Begin by heating a large pot over medium heat. Add a splash of olive oil and sauté the diced onion until translucent, about 5 minutes.
Stir in the minced garlic, chili powder, and cumin. Cook for an additional minute until fragrant.
Add the chicken breasts to the pot, followed by the chicken broth. Bring to a gentle simmer and cover. Cook for 15-20 minutes, or until the chicken is cooked through.
Remove the chicken from the pot and shred it with two forks. Return the shredded chicken to the pot.
