4 medium zucchinis
1 pound ground turkey or beef
1 cup bell peppers, diced
1 cup corn kernels
1 cup black beans, rinsed and drained
1 teaspoon chili powder
½ teaspoon cumin
1 cup shredded cheese (cheddar or Monterey Jack)
Salt and pepper to taste
Instructions
Preheat your oven to 375°F (190°C). Cut the zucchinis in half lengthwise and scoop out the seeds with a spoon, creating a hollow center.
In a large skillet over medium heat, add the ground turkey or beef. Cook until browned, breaking it into small pieces as it cooks.
Once the meat is cooked, add the diced bell peppers and corn to the skillet. Stir in the black beans, chili powder, cumin, salt, and pepper. Cook for an additional 5 minutes until the vegetables are slightly softened.
Spoon the meat and vegetable mixture into the hollowed-out zucchinis. Pack it in generously for maximum flavor!
