  • Salt and pepper to taste

  • Instructions

  • Preheat your oven to 375°F (190°C). Cut the zucchinis in half lengthwise and scoop out the seeds with a spoon, creating a hollow center.
  • In a large skillet over medium heat, add the ground turkey or beef. Cook until browned, breaking it into small pieces as it cooks.
  • Once the meat is cooked, add the diced bell peppers and corn to the skillet. Stir in the black beans, chili powder, cumin, salt, and pepper. Cook for an additional 5 minutes until the vegetables are slightly softened.
  • Spoon the meat and vegetable mixture into the hollowed-out zucchinis. Pack it in generously for maximum flavor!
  • Sprinkle shredded cheese generously over each stuffed zucchini half.
