300g Digestive Biscuits
150g Unsalted Butter
600g Full-Fat Cream Cheese
150g Granulated Sugar
200g Sour Cream
2 tsp Vanilla Extract
3 Eggs
Instructions
Preheat your oven to 180°C (350°F).
Crush the digestive biscuits in a food processor until fine crumbs form. Combine the crumbs with the melted butter until fully mixed. Press the mixture firmly into the bottom of a 9-inch springform pan to create an even layer. Bake for 10 minutes, then set aside to cool.
In a large mixing bowl, combine the cream cheese and sugar. Beat together until smooth and creamy. Add the sour cream and vanilla extract, mixing well to incorporate. Add the eggs one by one, mixing thoroughly after each addition until smooth.
Pour the cream cheese mixture over the cooled biscuit base. Gently spread it into an even layer.
Bake in the preheated oven for 50-60 minutes, or until the edges are set and the center has a slight jiggle. Turn off the oven, crack the oven door, and let the cheesecake cool inside for at least 1 hour.
After the cheesecake has cooled to room temperature, refrigerate for at least 4 hours or overnight for the best texture.
Just before serving, heat the heavy cream in a saucepan until it’s just about boiling. Pour it over chopped chocolate and let sit for 5 minutes. Stir until smooth and glossy.
Pour the ganache over the chilled cheesecake, allowing it to drip down the sides. Decorate with fresh berries or chocolate shavings if desired.
