8 oz of cream cheese
1/2 cup of granulated sugar
1/2 teaspoon of vanilla extract
1 large egg
1 cup of graham cracker crumbs
1/4 cup of melted butter
Pinch of salt
Fresh strawberries (for topping)
1 cup of chocolate chips (dark or milk)
Instructions
Preheat your oven to 325°F (163°C).
In a bowl, combine graham cracker crumbs, melted butter, and a pinch of salt until well mixed. Line a muffin tin with paper liners, and spoon about a tablespoon of the mixture into each liner, pressing it down firmly to create a crust.
In a large mixing bowl, beat the cream cheese until smooth and creamy. Gradually add the sugar, mixing thoroughly, followed by the egg and vanilla extract.
Divide the cream cheese mixture evenly among the muffin cups over the crust, filling about 2/3 full. Gently tap the pan on the counter to remove any air bubbles.
Bake for 18-20 minutes; the edges should be set, but the center will jiggle slightly. Allow them to cool at room temperature for about 30 minutes, then refrigerate for at least two hours.
While the cheesecakes chill, melt the chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth. Dip strawberries into the melted chocolate and place on parchment paper to set.
