Ingredients

  • 1 ½ cups of graham cracker crumbs
  • ½ cup of unsalted butter, melted
  • ⅓ cup of granulated sugar
  • 16 ounces of cream cheese, softened
  • ¾ cup of granulated sugar
  • 2 large eggs
  • ½ cup of sour cream
  • Juice and zest of 2 large lemons
  • 1 teaspoon of vanilla extract

  • Instructions

  • Preheat the oven to 325°F (160°C).
  • In a bowl, mix the graham cracker crumbs, melted butter, and sugar until combined. Press evenly into the bottom of a lined mini muffin tin and bake for about 10 minutes. Let cool.
  • Beat the softened cream cheese in a mixing bowl until creamy. Gradually add sugar and mix until smooth. Add the eggs one at a time, then add the sour cream, lemon juice, lemon zest, and vanilla extract until smooth.
  • Pour the filling over the cooled crusts, filling each mini cup about ¾ of the way full.
  • Bake for 15-18 minutes, or until the edges are set and the center has a slight jiggle.
  • Cool on a wire rack for about 10 minutes, then chill in the fridge for at least two hours.
  • Garnish with fresh berries or a dollop of whipped cream before serving.
