1 ½ cups of graham cracker crumbs
½ cup of unsalted butter, melted
⅓ cup of granulated sugar
16 ounces of cream cheese, softened
¾ cup of granulated sugar
2 large eggs
½ cup of sour cream
Juice and zest of 2 large lemons
1 teaspoon of vanilla extract
Instructions
Preheat the oven to 325°F (160°C).
In a bowl, mix the graham cracker crumbs, melted butter, and sugar until combined. Press evenly into the bottom of a lined mini muffin tin and bake for about 10 minutes. Let cool.
Beat the softened cream cheese in a mixing bowl until creamy. Gradually add sugar and mix until smooth. Add the eggs one at a time, then add the sour cream, lemon juice, lemon zest, and vanilla extract until smooth.
Pour the filling over the cooled crusts, filling each mini cup about ¾ of the way full.
Bake for 15-18 minutes, or until the edges are set and the center has a slight jiggle.
Cool on a wire rack for about 10 minutes, then chill in the fridge for at least two hours.
Garnish with fresh berries or a dollop of whipped cream before serving.
