2 cups of fresh or frozen peas
1 medium onion, chopped
2 cloves of garlic, minced
4 cups of vegetable or chicken broth
1 cup of heavy cream or coconut milk
1/2 cup of fresh mint leaves, loosely packed
Salt and freshly cracked black pepper, to taste
Instructions
In a large pot, heat a drizzle of olive oil over medium heat. Toss in the chopped onion and garlic. Cook until the onion turns translucent and fragrant, about 5 minutes.
Add the peas to the pot, stirring to combine with the onion and garlic. Sauté for another couple of minutes.
Pour in the broth and bring to a gentle simmer. Cover the pot and let it bubble away for about 10 minutes to soften the peas.
Remove the pot from heat and blend the soup until it’s smooth and creamy, either using an immersion blender or a regular blender.
Stir in the heavy cream or coconut milk along with the mint leaves. Adjust seasoning with salt and pepper.
