3/4 cup of warm water

1/2 teaspoon of salt

Instructions
In a large bowl, mix the warm water, yeast, and sugar. Let it sit for about 5-10 minutes until it becomes frothy.
Once frothy, add the flour and salt to the bowl. Stir until a rough dough forms.
Flour a clean surface and knead the dough for about 5-7 minutes until smooth and elastic.
Place the dough in a lightly greased bowl, cover with a towel, and let it rise in a warm spot for about an hour, or until it has doubled in size.
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
Once the dough is ready, punch it down and divide it into 8-10 equal pieces.
Roll each piece into a long rope (about 24 inches long) and shape it into a heart.
Prepare a baking soda bath by bringing 4 cups of water to a boil and stirring in the baking soda.
Drop each pretzel into the boiling soda bath, one at a time, for about 30 seconds. Use a slotted spoon to remove them and place back on the baking sheet.
Sprinkle with coarse sea salt and brush with melted butter, if using.
Bake for 12-15 minutes until golden brown. Let them cool slightly before serving.
