2 large eggs
8 oz Cremini or shiitake mushrooms, chopped
2 cups fresh spinach
1 cup ricotta cheese
½ cup grated Parmesan cheese
1 egg
A pinch of nutmeg
2 tablespoons olive oil
Salt to taste
Instructions
Prepare the Pasta Dough: In a large bowl, mix flour and salt. Make a well in the center and crack in eggs, mixing until a dough forms. Knead until smooth, wrap and rest for 30 minutes.
