- 1 lb fresh shrimp (peeled and deveined)
- 2 cups corn (fresh or frozen)
- 1 medium onion (chopped)
- 2 garlic cloves (minced)
- 4 cups seafood stock
- 1 cup heavy cream
- 2 tablespoons butter
- 1 tablespoon Cajun seasoning
- Salt and pepper (to taste)
- Optional: pinch of red pepper flakes, diced bell peppers, fresh herbs
Instructions
- In a medium pot, melt 2 tablespoons of butter over medium heat. Add the shrimp and sauté for about 3-5 minutes, until they turn pink. Remove and set aside.
- In the same pot, add the chopped onion and minced garlic. Sauté until the onion is translucent, approximately 5-7 minutes.
- Stir in the corn and Cajun seasoning, cooking for another 2 minutes until the corn is heated through.
- Add the seafood stock to the pot, bring it to a simmer, and let it cook for about 10-15 minutes to allow the flavors to meld.
- Using an immersion blender, carefully blend the mixture until smooth.
- Once blended, return the bisque to low heat, stirring in the heavy cream. Allow it to gently simmer for another 5 minutes.
- Return the sautéed shrimp to the pot and stir until heated through. Adjust seasoning with salt and pepper as desired.
- Ladle the bisque into bowls and add your favorite garnishes. Enjoy!
