Ingredients
Scale
1 ½ cups of graham cracker crumbs
½ cup of unsalted butter, melted
2 cups of cream cheese, softened
1 cup of powdered sugar
1 teaspoon of vanilla extract
1 ½ cups of strawberries, hulled and sliced
1 cup of heavy whipping cream
Instructions
In a medium bowl, mix together the graham cracker crumbs and melted butter. Stir until it resembles wet sand. Press this mixture firmly into the bottom of a 9-inch springform pan.
In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Gradually add powdered sugar and mix until well combined. Stir in the vanilla extract.
In another bowl, beat the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until combined and airy.
Fold in the sliced strawberries, being cautious not to eat too many during the process.
Pour the filling over the crust and smooth the top. Ensure it's evenly distributed.
Cover with plastic wrap and refrigerate for at least 4 hours, or overnight if possible.
Carefully release the cheesecake from the springform pan. Garnish with additional strawberries and mint leaves as desired before slicing and serving.
