2 cups all-purpose flour
1 ½ cups granulated sugar
½ cup unsalted butter
1 cup buttermilk
3 large eggs
2 teaspoons baking powder
1 teaspoon vanilla extract
2 cups fresh blueberries
1 cup heavy cream
½ cup powdered sugar
Zest of 1 lemon (optional)
1 teaspoon almond extract (optional)
1 cup shredded coconut (optional)
Fresh mint leaves (for garnish)
Additional blueberries (for garnish)
Powdered sugar dusting (for garnish)
Instructions
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
In a large bowl, whisk together the flour, baking powder, and salt.
In another bowl, cream the softened butter and granulated sugar until light and fluffy.
Incorporate the eggs one at a time into the butter mixture, mixing well after each addition. Stir in the vanilla extract.
Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk, beginning and ending with the flour mixture. Mix until just combined.
Gently fold in the fresh blueberries. Be careful not to overmix to keep the berries intact.
Divide the batter evenly between the prepared cake pans and smooth the tops.
Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
Allow the cakes to cool in the pans for about 10 minutes before transferring them to wire racks to cool completely.
While the cakes are cooling, whip the heavy cream with powdered sugar until stiff peaks form.
Once the cakes are cooled, place one layer on a serving plate. Spread a generous amount of whipped cream over the top, then place the second layer over it. Top the second layer with more whipped cream and garnish as desired.
