  • Instructions

  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a large bowl, whisk together the flour, baking powder, and salt.
  • In another bowl, cream the softened butter and granulated sugar until light and fluffy.
  • Incorporate the eggs one at a time into the butter mixture, mixing well after each addition. Stir in the vanilla extract.
  • Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk, beginning and ending with the flour mixture. Mix until just combined.
  • Gently fold in the fresh blueberries. Be careful not to overmix to keep the berries intact.
  • Divide the batter evenly between the prepared cake pans and smooth the tops.
  • Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  • Allow the cakes to cool in the pans for about 10 minutes before transferring them to wire racks to cool completely.
  • While the cakes are cooling, whip the heavy cream with powdered sugar until stiff peaks form.
  • Once the cakes are cooled, place one layer on a serving plate. Spread a generous amount of whipped cream over the top, then place the second layer over it. Top the second layer with more whipped cream and garnish as desired.
