Ingredients

  • 2 cups milk (or dairy substitute)
  • 2 large eggs

  • Instructions

  • Preheat your oven to 350°F (175°C).
  • In a medium saucepan, combine the rolled oats and milk. Heat over medium until it starts to simmer. Stir occasionally until the oats are soft and have absorbed most of the liquid, about 5-7 minutes.
  • In a separate bowl, whisk together the eggs, sugar, salt, and vanilla extract until well combined.
  • Once the oats are cooked, slowly add them to the egg mixture while whisking constantly to prevent the eggs from scrambling.
  • Pour the oatmeal custard mixture into a greased baking dish and smooth the top with a spatula.
  • Place it in the oven and bake for 30-35 minutes, or until the top is lightly golden and set. A toothpick inserted in the center should come out clean.
  • Let it cool for a few minutes before serving. Garnish with your choice of fruits, nuts, or a drizzle of honey!
