  • 1 cup all-purpose flour
  • 1/2 cup old-fashioned oats
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 1/4 teaspoon salt
  • 2 cups strawberries, hulled and sliced
  • 2 cups rhubarb, diced
  • 3/4 cup granulated sugar
  • 3 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract

  • Instructions

  • Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  • In a medium bowl, mix the flour, oats, brown sugar, and salt. Pour in the melted butter and stir until crumbly. Press half of this mixture into the bottom of your prepared pan.
  • In another bowl, combine the strawberries, rhubarb, granulated sugar, cornstarch, lemon juice, and vanilla. Toss until the fruit is well-coated.
  • Pour the fruit filling over your crust in the baking pan, spreading it evenly. Sprinkle the remaining crumble mixture on top.
  • Bake for about 40-45 minutes, or until the top is golden brown and the filling is bubbling at the edges.
  • Let the bars cool completely in the pan on a wire rack.
  • Once cool, lift the bars out of the pan using the parchment paper. Cut into squares and serve.
