4 cups of yellow squash, sliced
1 small onion, chopped
1 cup of shredded cheddar cheese
1 cup of crushed saltine crackers
½ cup of milk
3 large eggs
½ teaspoon of salt
¼ teaspoon of black pepper
3 tablespoons of butter, melted
Instructions
Preheat your oven to 350°F (175°C).
In a large pot, bring water to a boil. Add the sliced yellow squash and chopped onion. Cook for about 5 minutes until tender, then drain and set aside.
In a large mixing bowl, combine the cooked squash and onion with the shredded cheddar cheese, crushed saltine crackers, milk, eggs, salt, pepper, and melted butter. Stir until well combined.
Grease a 9×13-inch casserole dish with butter or cooking spray. Pour the mixture into the prepared dish and spread it out evenly.
