Ingredients

  • 1 cup of cooked rice
  • 1/2 cup of cooked chicken (or tofu for a vegetarian substitute)
  • 1/4 cup of diced onion
  • 1/4 cup of mixed vegetables (peas, carrots, corn)
  • 2 tablespoons of soy sauce
  • 4 large eggs
  • 2 tablespoons of milk
  • Salt and pepper to taste
  • 1 tablespoon of butter
  • Optional: Sriracha or hot sauce, mushrooms, cheese
  • Special Garnishes: Ketchup, chopped parsley, sesame seeds

  • Instructions

  • In a large skillet, heat a drizzle of oil over medium heat. Add the diced onion and cook until translucent. Toss in your cooked chicken (or tofu) and mixed veggies, cooking until warm, about 3-4 minutes.
  • Add the cooked rice and soy sauce to the skillet, mixing well. Let it cook for another 3-4 minutes.
  • In a separate bowl, whisk your eggs with the milk, a pinch of salt, and pepper until blended and foamy.
  • In the same skillet, melt the butter over medium-low heat. Pour in the egg mixture and allow it to cook without stirring until the edges start to set, about 2-3 minutes.
  • Once the omelet is slightly undercooked on top but set around the edges, add your rice filling to one half of the omelet. Carefully fold the other half over the filling.
  • Slide it onto your plate, seam side down. Drizzle ketchup on top and sprinkle with parsley or sesame seeds.
