1 pound boneless, skinless chicken breasts
1 tablespoon olive oil
2 cups chicken broth
1 cup uncooked white rice (long-grain preferred)
1 cup heavy cream
1 cup grated Parmesan cheese
3 cloves garlic, minced
1 teaspoon Italian seasoning
Salt and pepper to taste
1 cup spinach or other leafy greens (optional)
Fresh parsley for garnish (optional)
Instructions
Season the chicken breasts with salt, pepper, and Italian seasoning on both sides.
Heat a large skillet over medium-high heat and add olive oil. Sear the chicken for 5-7 minutes on each side until golden brown. Remove from skillet and set aside.
In the same skillet, reduce the heat and sauté minced garlic for about 30 seconds until fragrant.
Add rice to skillet, stir to coat with garlic, then pour in chicken broth and bring to a simmer.
Nestle the seared chicken breasts back into skillet, cover, and cook on low for 18-20 minutes until rice is tender.
Remove the lid, stir in heavy cream and Parmesan cheese, and add spinach if desired. Mix until creamy.
