Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 2 cups chicken broth
  • 1 cup uncooked white rice (long-grain preferred)
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup spinach or other leafy greens (optional)
  • Fresh parsley for garnish (optional)

  • Instructions

  • Season the chicken breasts with salt, pepper, and Italian seasoning on both sides.
  • Heat a large skillet over medium-high heat and add olive oil. Sear the chicken for 5-7 minutes on each side until golden brown. Remove from skillet and set aside.
  • In the same skillet, reduce the heat and sauté minced garlic for about 30 seconds until fragrant.
  • Add rice to skillet, stir to coat with garlic, then pour in chicken broth and bring to a simmer.
  • Nestle the seared chicken breasts back into skillet, cover, and cook on low for 18-20 minutes until rice is tender.
  • Remove the lid, stir in heavy cream and Parmesan cheese, and add spinach if desired. Mix until creamy.
  • Serve warm, garnished with fresh parsley.
