  • 1 cup Orzo pasta
  • 8 ounces Mushrooms
  • 4 cloves Garlic
  • 1 medium Onion
  • 4 cups Chicken broth
  • 2 tablespoons Olive oil
  • Fresh parsley (for garnish)
  • 2 cups Spinach (optional)
  • 1/2 cup Parmesan cheese (optional)
  • Red pepper flakes (optional)
  • Fresh basil leaves (for garnish, optional)
  • Chopped green onions (for garnish, optional)

  • Instructions

  • In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent, about 3-4 minutes.
  • Add the minced garlic and mushrooms to the pot, cooking until the mushrooms are tender, around 5-7 minutes.
  • Next, add the chicken thighs to the pot, cooking until they are browned on all sides, approximately 5-6 minutes.
  • Stir in the orzo, coating it with the oil and flavors from the pot, for about 1 minute.
  • Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat to low and cover the pot. Let it simmer for about 15 minutes or until the orzo is al dente.
  • Once cooked, check that the chicken is fully cooked through. If using, stir in the fresh spinach and allow it to wilt. Season with salt and pepper to taste.
