1 tablespoon shawarma spice blend
1 large onion, diced
4 garlic cloves, minced
2 cups long-grain rice
4 cups chicken broth
1 can (15 ounces) chickpeas, drained
2 tablespoons olive oil
Salt and pepper to taste

Instructions
Prep the Chicken: Cut the chicken thighs into bite-sized pieces and season with shawarma spice, salt, and pepper. Let sit for 15 minutes.
