1 can Chickpeas (15 oz)
1 medium Butternut Squash, diced
1 Red Bell Pepper, chopped
1 medium Zucchini, chopped
2 cups Vegetable Broth
1 small Yellow Onion, diced
2–3 cloves Garlic, minced
1 tsp Paprika
1 tsp Dried Oregano
Salt and Pepper to taste
2 tbsp Olive Oil
Juice of 1 Lemon
Fresh Parsley, chopped (for garnish)
Instructions
Sauté the Aromatics: Start by heating the olive oil in a large pot over medium heat. Toss in the diced onion and sauté until translucent—about 3-4 minutes. Then add the minced garlic.
Add the Veggies: Stir in the diced butternut squash and bell pepper. Sauté for another 5-7 minutes until they begin to soften.
Cook the Orzo: Pour in the orzo and give it a nice stir. Let it sit for a minute—this helps it toast a little.
