  • 3 large onions, thinly sliced
  • 4 cloves garlic, minced
  • 4 cups beef or vegetable broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon fresh thyme or ½ teaspoon dried
  • Salt and pepper to taste
  • 1 cup grated Parmesan cheese, plus more for serving
  • Fresh parsley for garnish

  • Instructions

  • In a large pot or Dutch oven, heat the butter and olive oil over medium heat.
  • Add the sliced onions. Cook, stirring often, until they are soft and caramelized, about 15-20 minutes.
  • Once the onions are caramelized, stir in the minced garlic and cook for an additional 1-2 minutes.
  • Pour in the beef or vegetable broth, followed by Worcestershire sauce, thyme, salt, and pepper. Bring the mixture to a gentle boil.
  • Add the pasta, stirring well to ensure it’s submerged in the broth. Reduce heat to low, cover, and simmer until pasta is al dente, about 10-12 minutes.
  • Once the pasta is cooked, remove the pot from heat. Stir in the grated Parmesan cheese until melted and creamy. Adjust seasoning to taste.
