12 ounces pasta (fettuccine or penne)
2 tablespoons butter
2 tablespoons olive oil
3 large onions, thinly sliced
4 cloves garlic, minced
4 cups beef or vegetable broth
1 tablespoon Worcestershire sauce
1 teaspoon fresh thyme or ½ teaspoon dried
Salt and pepper to taste
1 cup grated Parmesan cheese, plus more for serving
Fresh parsley for garnish
Instructions
In a large pot or Dutch oven, heat the butter and olive oil over medium heat.
Add the sliced onions. Cook, stirring often, until they are soft and caramelized, about 15-20 minutes.
Once the onions are caramelized, stir in the minced garlic and cook for an additional 1-2 minutes.
Pour in the beef or vegetable broth, followed by Worcestershire sauce, thyme, salt, and pepper. Bring the mixture to a gentle boil.
Add the pasta, stirring well to ensure it’s submerged in the broth. Reduce heat to low, cover, and simmer until pasta is al dente, about 10-12 minutes.
Once the pasta is cooked, remove the pot from heat. Stir in the grated Parmesan cheese until melted and creamy. Adjust seasoning to taste.
Serve hot, garnished with fresh parsley and extra cheese if desired.
