  • 4 cloves garlic, minced
  • 1 large onion, diced
  • 1.5 cups long-grain rice
  • 3 cups chicken broth
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp coriander
  • 1 tsp turmeric
  • 2 tbsp lemon juice
  • Salt and pepper to taste
  • Parsley or cilantro for garnish

Instructions

  • In a bowl, combine olive oil, minced garlic, spices (cumin, paprika, coriander, turmeric), lemon juice, salt, and pepper. Add the chicken thighs, ensuring they are well-coated. Let it marinate for at least 15 minutes while you prep the other ingredients.
  • In a large pot over medium heat, add a little more olive oil, then add the diced onion. Sauté for about 3-4 minutes until the onions are translucent and fragrant.
  • Add the marinated chicken to the pot and brown it on both sides for about 5 minutes.
  • Stir in the rice, ensuring it is coated with the flavors from the pot. Pour in the chicken broth and mix well.
  • Bring the mixture to a boil, cover, and reduce the heat to low. Let it simmer for about 20 minutes or until the rice is cooked and has absorbed all the liquid.
  • Once cooked, turn off the heat and let the dish sit covered for an additional 5 minutes. Then, fluff the rice with a fork to separate the grains.
  • Transfer to a serving dish and garnish with chopped parsley or cilantro. Serve warm.
