1 ½ cups graham cracker crumbs
½ cup unsalted butter, melted
¼ cup granulated sugar
16 oz cream cheese, softened
½ cup granulated sugar
2 large eggs
1 tsp vanilla extract
¼ cup fresh orange juice
1 tbsp orange zest
Instructions
Preheat your oven to 325°F (160°C).
In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar. Stir until it resembles wet sand.
Line a mini muffin tin with paper liners and lightly spray them with cooking spray.
Press about a tablespoon of the mixture into the bottom of each liner.
Pop the crusts into the preheated oven for about 5-8 minutes until they’re lightly golden. Let them cool.
Beat the softened cream cheese until smooth, add sugar, mixing until well combined. Add eggs one at a time, mix in vanilla, orange juice, and zest.
Spoon the cheesecake mixture over each crust.
Return the mini cheesecakes to the oven and bake for 15-18 minutes.
Let them cool at room temperature for about 30 minutes, then refrigerate for at least 2 hours.
