  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ¼ cup fresh orange juice
  • 1 tbsp orange zest

  • Instructions

  • Preheat your oven to 325°F (160°C).
  • In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar. Stir until it resembles wet sand.
  • Line a mini muffin tin with paper liners and lightly spray them with cooking spray.
  • Press about a tablespoon of the mixture into the bottom of each liner.
  • Pop the crusts into the preheated oven for about 5-8 minutes until they’re lightly golden. Let them cool.
  • Beat the softened cream cheese until smooth, add sugar, mixing until well combined. Add eggs one at a time, mix in vanilla, orange juice, and zest.
  • Spoon the cheesecake mixture over each crust.
  • Return the mini cheesecakes to the oven and bake for 15-18 minutes.
  • Let them cool at room temperature for about 30 minutes, then refrigerate for at least 2 hours.
