  • Begin by bringing a large pot of salted water to a boil. Add the orecchiette and cook according to the package instructions until al dente. Reserve about 1 cup of pasta water, then drain the rest and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes, or until fragrant. Be careful not to brown it. Then, add the sliced mushrooms and cook until they are golden brown and have released their moisture, about 5-7 minutes.
  • Once the mushrooms are perfectly cooked, stir in the chopped thyme. Season with salt and pepper to taste. If desired, add chili flakes at this stage for a bit of heat. Cook for another minute to allow the flavors to meld.
  • Now, add the drained orecchiette directly into the skillet with the mushroom sauce. Toss well to coat the pasta. If the mixture seems dry, add a splash of the reserved pasta water to create a silky sauce. Cook together for 1-2 minutes to heat through.
